Banana Protein Pancakes

It's New Years eve as I write this post, we have no plans for the evening, but ensuring our kids go to bed happy and healthy. Since i'll likely not be making it to midnight, I started the day with an early morning gym session. As I stepped back in the house exhausted, it was as quiet as I'd left it, with little snores coming from all the bedrooms but one. I spied the store bought pancake mix on the bench, which wasn't there when I left. A subtle hint. Sure enough when I poked my head in my eldest daughters room, there she was reading her Harry Potter book asking for pancakes. Not keen to undo the gym sesh, but now craving pancakes, I looked in the cupboard only to realise that in those days between christmas and new year there was something that i'd forgotten to do. The groceries! I know you all feel me! We've been eating left overs for the past few days and we've been enjoying our summer days swimming, lazing about, going to bed late and making memories. Time to get creative and scrape together what we had. They actually came out so delicious and using just the 4 ingredients. I just had to share!

Ingredients

  • 1 Banana

  • 2 Eggs

  • 1 Scoop of Vanilla Protein Powder

  • 1 Tablespoon of Coconut Flour

Directions - Standard

Mash banana and mix in beaten egg.

Add the protein powder and coconut flour and mix well.

Set pan to medium - low setting and scoop in tablespoon sized dollops of batter.

Cook for 4-5 minutes each side

Serve hot.


Directions - Thermomix

Place all ingredients into jug and mix on speed 6 for 10 seconds

Set pan to medium - low setting and scoop in tablespoon sized dollops of batter

Cook for 4-5 minute each side.

Serve hot.


*I used a scoop of IsoPept Zero in Vanilla Ice Cream which is my hubbies current protein powder as I've run out (did I mention i've been lazing about?) I've calculated the nutrition breakdown using that.

*I ate these with just some yummy grass fed butter, but you can add your choice of toppings, yogurt, extra banana or berries would go great.
